Here’s a salad idea for Memorial Day.

It’s colorful, light, and topped with a quick and easy-to-make blue cheese dressing.

No need to just stick with veggies in salad.

This yumminess has fresh blackberries, dried cranberries, crumbled blue cheese, Black Forest ham, shelled edamame, and some veggies for a crunch…..

…..all over fresh mixed greens.

It’s a beautiful summertime salad and great for making ahead of time too.

Just hold off on adding the dressing until right before serving.

So here’s to long weekends!

Let’s check out the ingredients:

Blackberries-and-Blue-Cheese-Ham-Salad

For the Salad:  mixed greens, Black Forest ham, carrots, cucumbers, shelled edamame, blackberries, dried cranberries, and crumbled blue cheese.

For the Blue Cheese Dressing:  mayonnaise, milk, pepper, crumbled blue cheese, and not pictured; salt, lemon juice, and onion powder.

Here’s how to make it:

For the Salad:

1-lettuce-for-salad

Add the mixed greens to a platter or individual serving plates.

Next top the greens with the carrots,

….which is a great freezer pantry item to have on hand for salads,

and snacks too.

6-add-cucumbers-to-salad

Then add the cucumbers.

7-slice-ham

Next roll the slices of ham together in one big roll and slice the ham widthwise in thin strips.

Add the ham on top of the salad.

Then top with the dried cranberries,

crumbled blue cheese and blackberries.  Set aside for a moment.

For the Blue Cheese Dressing:

In a small bowl add the mayonnaise, milk, lemon juice, salt, pepper, onion powder and blue cheese.  Mix together.

Just before serving, drizzle the blue cheese dressing on the salad…

Blackberries, Blue Cheese and Black Forest Ham Salad

Yield: Serves 2

Ingredients:

For the Salad:

2 servings of mixed greens
½ cup of sliced carrots (sliced widthwise)
¼ cup of shelled edamame
½ cup of sliced and quartered hothouse cucumber (or a regular cucumber)
¼ pound of thinly sliced Black Forest ham
¼ cup of dried cranberries
½ cup of crumbled blue cheese
1 cup of fresh whole blackberries

For the Blue Cheese Dressing:

½ cup mayonnaise
¼ cup milk
½ teaspoon lemon juice
4 dashes salt
5 dashes ground black pepper
4 dashes onion powder
3 tablespoons crumbled blue cheese

Directions:

For the Salad:

Add the mixed greens to a platter or individual serving plates. Next, top with the carrots, shelled edamame, and cucumbers. Then roll the slices of ham together in one big roll and slice the ham widthwise in thin strips. Then add the ham, dried cranberries, crumbled blue cheese and blackberries on top of the salad. Set aside for a moment.

For the Blue Cheese Dressing:

In a small bowl add the mayonnaise, milk, lemon juice, salt, pepper, onion powder and blue cheese. Mix together. Just before serving drizzle the blue cheese dressing on the salad.
