Easy Chicken with Black Beans

Here is my “old faithful” quick and easy recipe that I make when I’ve flat run out of time and ideas for dinner.

It’s one of those meals that I make with my stand-by pantry ingredients……a can of black beans, frozen chicken breasts, and whatever cheese and toppings I have on hand.

In this recipe I used a delicious Hispanic cheese by Cacique, Panela cheese which crumbles up so nicely and adds a perfect texture to the dish.

Cacique Panela cheese has a taste that resembles mozzarella.  Cacique Hispanic cheeses are generally located in the deli department of the grocery store.

I included the packaging of this cheese in the “ingredients” section below so you can see what it looks like in case you’re not familiar with it.

When I order tortilla soup at one of my fave Mexican Restaurants, they add this type of crumbled cheese to the top and it’s sooo good.

So back to this stand-by super quick and easy recipe…..

It’s similar to another recipe I made called “Lime Spicy Chicken”.

I just changed around the spices a bit, used different toppings, and cut the chicken differently…in chunks rather than large thin pieces.

It’s a great way to use your pantry staples and eat healthy, homemade meals.

Here’s how to make it.

For the Chicken:

Cut the chicken into bite size pieces.

Heat a skillet on medium heat…..

……and add the olive oil.

Add the pieces of chicken to the skillet.

Next add the ground black pepper,

and onion powder.

For some reason, onion powder makes the food smell so good when it’s cooking…smells like comfort food.

Then add the garlic powder,

red pepper flakes,

cumin, and

salt.

Stir the spices in with the chicken.

Continue to stir chicken.

It should start to brown fairly quickly.   It may take about 8 to 10 minutes for the chicken to cook.

For the Beans:

While the chicken is cooking, add the beans to a small pot.

Then, add the chopped jalapeno.

Next, add a few dashes of onion powder, and

a couple dashes of cumin.

Stir the beans and cook them until they are hot (about 7 minutes).

Toppings and Assembly of Dish:

Add the beans to a serving dish.

Then add half of the crumbled cheese (reserving the other half for later).

Next, add the chicken over the cheese.

Squeeze the juice from the lime over the chicken (1/2 a lime per serving).

The flavor of the lime juice goes so well with this combination of ingredients.

Top with the remaining crumbled cheese.

Then add the chopped tomatoes….

….and the chopped red onions.

Lastly, garnish with something green, such as a piece of parsley, chopped green onions, or chopped jalapenos (optional).

Easy Chicken with Black Beans

Yield: Serves 2

Ingredients:

For the Chicken:
2 boneless skinless Chicken Breasts
3 teaspoons Olive Oil
¼ teaspoon ground Cumin
½ teaspoon Garlic Powder
½ teaspoon ground Black Pepper
¼ teaspoon Red Pepper Flakes
¼ teaspoon Salt

For the Beans:
1 can Black Beans (15 ounces)
¼ cup diced Jalapeno Peppers
3 dashes onion powder
2 dashes cumin

For the Toppings:
½ cup crumbled Cacique Panela Cheese (Hispanic Cheese)
½ cup chopped Tomatoes
¼ cup chopped Red Onions
1 Lime

Directions:

    This dish is just brimming with some tasty southwestern flavors. I really like how this is layered too, keeps the top raw veggies crisp and the cheese in the middle melty-yum! Cacique cheese is one of my favorites too. Great post!
