Blueberry Oatmeal Smoothie

Are you picky about how ripe you like a banana to be before you eat it?

Sometimes I have to buy them a little green so they won’t get too ripe before I have a chance to eat them.

There’s a particular point where a banana gets a little to ripe for my taste buds.  But I hate to let them go to waste.

So I’ll convince myself that I’ll just let them get really ripe and then I’ll make banana bread.

Then 9 times out of 10 I’ll run out of time to make banana bread, see a couple gnats hanging around the super ripe bananas, and out to the trash they go.

When bananas start getting ripe faster than they can be eaten, an option is to store them in the freezer for use in smoothies.

Just peel the banana and squeeze lime or lemon juice all over them, put each one in a separate snack size plastic zipper bag, and then store them in the freezer.

They hold their color really well when using the citrus juice.

So here’s a smoothie recipe for using up those bananas if you have too many, or even if you don’t have too many, it’s a great breakfast on-the-go.

It tastes best when the smoothie is really cold so I like to use frozen blueberries and a frozen banana if I have one.

Banana, blueberries, cooked oatmeal (on the thick side), honey, cinnamon, flax seed, ice cubes

Here’s how to make it.

In a blender, add the oatmeal.

and ice cubes.

Blend on the smoothie setting…

…and serve right away while it’s cold.

Ingredients

  • ½ cup frozen blueberries
  • 1 frozen banana (or unfrozen is fine too)
  • 2/3 cup cooked oatmeal cooled and on the thick side
  • 1 tablespoon honey or add to taste
  • 1/8 teaspoon cinnamon
  • 1 teaspoon flax seed
  • 1 cup ice cubes (heaping)

Instructions

  • Add all ingredients to the blender and blend on the smoothie setting. 
  • Serve right away while it’s ice cold. As an option it can be served over a little ice to make it even colder.

  1. Thanks Nancy for sharing this awesome recipe. One of my favorite for creating delicious recipes is the blueberry because its rich with anti-oxidants that neutralize free radicals. Banana also have a lot of benefits. I love your photos so I pinned them.
