Barbecue Turkey Flatbread Pizza on pan

This recipe will give leftover turkey a face lift and no one will ever know.

The thin flatbread gets crispy when baked and the toppings have delicious southwestern flavor.

Once out of the oven the combination of flavors gets even better with fresh cilantro and drizzles of barbecue ranch sauce.

This pizza has a southwestern flare, and I can’t help but think of my friend when I made it.

She’s from Pennsylvania and was living in California for a while.

Whenever we went out to lunch (in California) she would always say that everything in California has corn in it.

The sound of her voice was so funny because it had the tone of being absolutely amazed and astonished.

She would go on and on about how she couldn’t even order a salad without corn in it.

It was so funny to me because I think she was a corn magnet.

I can still hear her voice saying that and I’m laughing at this very moment as I write this.

About this Recipe

This pizza is a great way to use up leftover cooked turkey.

The meat on this pizza can also be changed up to cooked chicken, beef or pork.

Serve this colorful flatbread pizza as an appetizer, lunch or light dinner.

Pizza – Thin flatbread pizza crust, leftover cooked turkey, barbecue sauce, Monterey jack cheese, black beans, corn, red bell pepper, red onion, pepper and cilantro

BBQ Ranch Sauce Topping – Barbecue sauce and ranch dressing

HOW TO MAKE THIS RECIPE

Preheat the oven to 350 degrees F.

For the BBQ Ranch Sauce Topping:

In a small bowl add the ranch dressing and bbq sauce.

Stir together and set aside.

For the Pizza:

Add barbecue sauce on turkey

In a small bowl add the turkey and the bbq sauce.

Stir together and set aside.

Cheese:

Shred the cheese and set aside for just a moment.

On a large cookie sheet, add the flatbread pizza crusts.

Top with cheese.

Black Beans:

Add black beans on flatbread

Add the black beans.

Corn:

Add corn on flatbread

And top with corn (my friend’s favorite ingredient).

Red Bell Pepper and Red Onion:

Chopped red onions and peppers

Add bell peppers on flat bread

Top with red bell pepper,

Ground Black Pepper:

Add pepper on flatbread pizza in pan

Add the pepper evenly over the toppings.

Turkey with BBQ Sauce:

Top with the bbq turkey.

Bake:

Bake in a preheated oven (at 350 degrees F.) until the cheese melts and the edges of the flatbread start to brown (about 10 minutes).

Cilantro:

Remove from the oven and top with cilantro.

Using a pizza cutter, cut the pizza in triangular pieces.

BBQ Ranch Sauce:

Add BBQ ranch dressing on pizza

Drizzle the bbq ranch sauce on top.

Serve:

Ingredients

For the Sauce Topping:

  • 3/4 cup Ranch dressing
  • 1 tablespoon barbecue sauce

For the Pizza:

  • 2 thin flatbread pizza crusts
  • 2 cups cooked turkey cubed
  • 1/2 cup barbecue sauce
  • 2 cups shredded Monterey jack cheese
  • 1 cup canned black beans drained
  • 1/2 cup canned corn drained
  • 1/2 cup chopped red bell pepper
  • 1/4 cup chopped red onion
  • 1/2 teaspoon coarse ground pepper
  • 1/2 cup chopped cilantro

Instructions

For the BBQ Ranch Sauce Topping:

  • In a small bowl add the ranch dressing and bbq sauce. Stir together and set aside. 

For the Pizza:

  • Preheat the oven to 350 degrees F.
  • In a small bowl add the turkey and the bbq sauce, stir together and set aside. 
  • On a large cookie sheet, lay each flatbread pizza crusts. Top with the cheese, black beans, corn, red bell pepper, and onion. Add the pepper evenly over the toppings. Top with the bbq turkey. 
  • Bake in a preheated oven until the cheese melts and the edges of the flatbread start to brown (about 10 minutes). 
  • Remove from the oven and top with cilantro.  Using a pizza cutter, cut the pizza into triangular pieces. Drizzle the bbq ranch sauce on top and serve while hot.
