Blueberry and Strawberry Granola Streusel Crisp

Incredibly easy to make and even easier to eat.

Berry Granola Crisp

A berry crisp makes a quick and easy dessert that has a little bit of sweet, a little tart and a lot of crunch.

And when served warm with ice cream on top, the sweet cream from the melted ice cream covers the entire dessert.

Grab a spoon.  It’s so good.

In addition to this dessert being easy to make, and tasting divine, I love that it doesn’t generate a lot of dirty dishes.

The berry filling is mixed together in the same dish that’s used for baking.

Then the berry mixture is topped with streusel which is super easy to make and tastes so good.

Streusel is a crumbly topping for desserts such as cakes, muffins, pies, or ice cream.

The streusel ingredients in this recipe include sliced almonds, brown sugar, butter, salt, flour and an added bonus of granola.

This crisp can be served with or without ice cream.

This delicious dessert can be made ahead of time, stored in the refrigerator and warmed up in the microwave just before serving…then topped with a scoop of vanilla ice cream.

Here’s how to make it.

Preheat the oven to 375 degrees F.

For the Berry Filling:

Cut Strawberries on Board

Cut each strawberry into quarters…

To a 1.3 quart oval baking dish (or 8×8 inch 2 quart baking dish),

…add strawberries,

Then,

Cut Limes on Cutting Board

…cut a lime in quarters,

…squeeze the juice from the entire lime over the berries.

Next,

Sugar on Berries

…to the baking dish, add sugar…

…mix all of the ingredients together.

Set aside while making the topping.

For the Streusel Topping:

Granola in Bowl

In a medium size bowl, add granola…

Add Salt in Bowl

…and salt.

Melted Butter in Bowl

Then, if your butter is soft, add it in the mixture.

If the butter is hard, put it in the microwave for about 2 or 3 seconds and then add it to the mixture.

With a fork, mix all of the topping ingredients together.

Next, going back to the filling; give the berries a quick mix.

…bake in a preheated oven until the filling starts to bubble and…

…the granola topping is brown (about 30 to 40 minutes).

TIP – Be careful not to leave the crisp in the oven too long or the filling will dry out.

Ingredients

For the Berry Filling:

  • 1 pound fresh strawberries (fresh or frozen) washed, stems removed, cut into quarters
  • 1-1/2 cups fresh blueberries (fresh or frozen) rinsed and stems removed
  • 1/4 cup granulated sugar
  • 1 lime
  • 2 dashes coarse salt or sea salt

For the Streusel Topping:

  • 1 cup granola
  • 1/2 teaspoon salt
  • 1/3 cup brown sugar
  • 1/2 cup sliced almonds
  • 1/2 cup flour
  • 4 tablespoons butter softened

For Baking:

  • 1.3 quart oval baking dish an 8 x 8 inch 2 quart baking dish should also work well

Instructions

  • Preheat the oven to 375 degrees F.

For the Berry Filling:

  • To a baking dish, add strawberries and blueberries.  Squeeze the juice of a lime over the blueberries. 
  • To the baking dish, add sugar and salt.  Mix together and set aside for a moment.

For the Streusel Topping:

  • In a medium size bowl, add granola, brown sugar, flour, sliced almonds, salt and butter.  With a fork, mix all of the ingredients together.

For the Berry Crisp:

  • Next, going back to the berry filling; give the berries a quick mix.
  • To the baking dish, add the topping evenly on top of the berries.
  • Bake in a preheated oven until the filling starts to bubble and the granola topping is brown (about 30 to 40 minutes).  Be careful not to leave the crisp in the oven too long or the filling will dry out. 
  • Serve warm or cool with vanilla ice cream.
