Tuna Salad and Fruit Radicchio Wraps
A delightful finger food salad.
Have you ever checked out the specialty section in the produce department for unusual fruits and veggies?
Often times this section has various hot peppers, tomatillos, Japanese eggplant, lemon grass, and radicchio.
The radicchio always catches my eye because it’s so pretty.
Generally I find that radicchio is on the bitter side when it’s in a salad but the texture and size of the leaves seems so perfect to use as a small “bowl” or wrap for a salad.
In this recipe, radicchio is a “bowl” or wrap for tuna salad that’s made with a bit of curry powder and chopped cilantro.
Then pieces of red pear and kiwi fruit are added for a touch of sweetness.
The combination of flavors works well together for a little sweet and a little savory in each bite.
Serve these colorful wraps for an appetizer, lunch or a light main dish.

Tuna, mayonnaise, curry powder, cilantro, red pear, kiwi fruit, radicchio, lemon juice, and pepper

Here’s how to make it.
For the Tuna Salad – In a medium size bowl add tuna,
…curry powder,
…mayonnaise,
…chopped cilantro,
…and pepper.
Mix together.
Try to keep some of the tuna in chunks so that the salad isn’t mushy.
Set aside.
For the Pear – core the pear and…
…cut into strips and half circles (from the pear section with rounded edges).
To a small bowl, add the cut pieces of pear.
To the bowl, add fresh lemon juice and mix the pear so that it’s coated in the juice.
The lemon juice adds a nice flavor to the pear and should keep the pieces from turning brown.
For Serving – Cut the skin off of the kiwi and cut the fruit into small pieces.
Next,
…peel 6 whole leaves off of the head of radicchio.
….peel 6 leaves off of the head of radicchio.
In the middle of each radicchio leaf,
…spoon the tuna mixture.
Then lay the pieces of red pear on top of the tuna.
Top with the pieces of kiwi fruit.
Garnish with a cilantro leaf.
These last nicely in the refrigerator for a couple of days.
They also make fun and delicious appetizers.
Serve chilled or at room temperature.

This really does put a great spin on the traditional tuna salad! The use of curry was a smart choice for the salad, it definitely amps up the flavor quite a bit. Also the crunchy and tart fruits on top are an excellent touch. Great post-yum!
