Dill and Toasted Almond Chicken Salad with Grapes

This time of year grapes are showing up often in the grocery store and they look so fresh and delicious.  They’re the perfect snack for hot summer days.

Here’s a super delicious chicken salad recipe that includes red grapes, toasted almonds, dill, and a bit of apricot preserves for an additional touch of sweetness.

Have you ever tried those rotisserie chickens that are in a hot case in the grocery store?

They’re pretty tasty and an easy way to make a quick meal.

If you do buy these, or make your own whole chicken for a meal, this recipe is a perfect way to use the leftovers.

This chicken salad can be served in a sandwich, on top of a salad, or on bite size pieces of french bread as an appetizer.

Let’s check out the ingredients.

Pieces of cooked chicken, mayonnaise, Dijon mustard, dried dill, celery, green onions, red grapes, salt, raw slivered almonds, pepper, and apricot preserves.

Here’s how to make it:

Heat a small skillet on low to medium heat.

Add the raw slivered almonds, and continuously stir…

…when the almonds start to turn a light brown (about 3 or 4 minutes), remove them from the heat and set aside to cool.

While the almonds are cooling, add the pieces of cooked chicken to a medium size bowl.

Then,

chop the celery,

and add it to the bowl.

Chop the green onions,

and add them to the bowl.

cut the grapes in half…

add them to the bowl.

Next,

add the toasted almonds to the bowl.

Add the mustard…

mayonnaise…

…dill…

…pepper…

…salt, and

apricot preserves to the bowl.

Stir the ingredients together.  Give it a quick taste test,

and salt to taste if needed.

Serve on your favorite sandwich bread, on top of a salad, or on bite-size pieces of French bread as an appetizer.

If making a sandwich, an option is to use sliced cucumbers instead of, or in addition to lettuce.

Yield: Serves 3

Ingredients:

½ cup raw slivered almonds
1-½ cups bite size pieces of cooked chicken
5 medium size stalks of celery (about ¾ cup chopped celery)
2 green onions
½ cup of red grapes that are cut in half
2 teaspoons Dijon mustard
½ cup mayonnaise
1 tablespoon dried dill
½ teaspoon ground black pepper
3 tablespoons apricot preserves
¼ teaspoon salt (or salt to taste)

Directions:
