Grapefruit Marinated Salmon

This salmon is baked in the oven in a delicious marinade with grapefruit juice, ginger root, soy sauce, brown sugar and garlic.

And all of these ingredients are baked inside a foil “tent” that’s tightly sealed at the top.

About this Recipe

I especially like baking salmon in a foil tent because it steams in its own juices (in this case it steams in the delicious marinade).

It also cooks evenly and is quick and easy to make.

About Serving

The natural juices from the salmon blend with the marinade to make a wonderful sauce to serve over the salmon and a bed of rice.

HOW TO MAKE THIS RECIPE

Preheat the oven to 350 degrees F.

For the Marinade:

Dice Ginger Root

Peel and dice the ginger root.

Ginger Root Onion and Garlic

Chop the onions and dice the garlic.

Grapefruit Marinade

In a bowl, combine soy sauce, water, brown sugar, ginger root, garlic, red pepper flakes and pepper.

Grapefruit Marinade

To the bowl, add fresh squeezed grapefruit juice.

Whisk together and set aside.

For the Salmon:

Salmon on Foil

On a sheet pan or pizza pan, lay a large piece of foil.

Place the pieces of salmon on the foil skin side-down (if the salmon has skin on it).

Pour the marinade over the salmon making sure that it stays on the foil.

Form a Foil “Tent”:

Tented Salmon

Pull all of the sides of the foil up together to make a “tent” and roll the top edges tightly together to seal the tent.

Bake:

Bake the salmon in preheated oven (at 350 degrees F.) until it reaches the desired doneness (about 10 minutes).

Salt to taste and serve warm over warm rice.

Ingredients

For the Marinade:

  • 1 whole grapefruit juiced
  • 2 tablespoons soy sauce
  • 1/4 cup water
  • 2 tablespoons brown sugar
  • 2 teaspoons fresh (peeled) ginger root
  • 2 tablespoons chopped onion
  • 1 clove garlic peeled and diced
  • 3/4 teaspoon dried red pepper flakes
  • 1/2 teaspoon ground black pepper

For the Salmon:

  • 2 servings (about 3 ounces each) salmon fillets skin on or off
  • Marinade
  • 1 tablespoon fresh chopped parsley for garnish

Equipment

  • Heavy duty foil

Instructions

  • Preheat oven to 350 degrees F. 

For the Marinade:

  • In a bowl, combine juice from a grapefruit, soy sauce, water, brown sugar, ginger, onion, garlic, red pepper flakes and pepper.  Whisk together and set aside.

For the Salmon:

  • On a sheet pan or pizza pan, lay a large piece of heavy duty foil.
  • On the foil, place the pieces of salmon (skin side-down if there is skin on the salmon).  
  • Pour the marinade over the salmon making sure that it stays on the foil
  • Pull all of the sides of the foil up together to make a "tent" and roll the top edges tightly together to seal the tent.  
  • Set the foil packet on a small cookie sheet or pizza pan.
  • Bake the salmon in a preheated oven until it reaches the desired doneness (about 10 minutes). 
  • Salt to taste and serve warm over warm rice.  Garnish with fresh parsley.
