Oatmeal, Blueberry & Peanut Butter Chip Cookie Bars

A quick and easy way to make cookies!

There were so many sweets around during the holidays that I had to take a break from them for a while.

But that sure didn’t last very long.  Here I am making cookies again. But these cookies are easy to make because they don’t require making them in batches to use up all of the dough.

So many times I can remember having to stay up late to finish making batches of cookies.

I would be so tired that I practically fell asleep standing up while waiting to take them out of the oven.

These cookie bars are made in just one batch. Hurray.  The dough just goes on to a large cookie sheet.  After it’s done baking it needs to cool for a bit and then the fun part is to cut them with a pizza cutter.

And just like that, done. No additional batches to bake.

I like to have dried blueberries on hand to make goodies like these cookies.  The dried berries add a nice flavor and are a little bit chewy which is a good thing.

So let’s check out the ingredients.

Oatmeal, dried blueberries, peanut butter chips, brown sugar, granulated sugar, flour, butter, eggs, vanilla, cinnamon, salt and baking powder.

Here’s how to make it.

Preheat oven to 350 degrees F.

In medium size bowl, add flour,

baking powder,

salt, and

cinnamon.

Stir the dry ingredients together and set aside.

In a large mixing bowl add butter,

brown sugar, and

granulated sugar.  Beat until light and fluffy.

To the mixing bowl, add the eggs and…

…vanilla extract.  Beat until light and fluffy.

Turn the mixer speed to low and slowly add the flour mixture.  Once incorporated, turn the mixer to a higher speed until a dough forms.

Using a spatula or large spoon stir in the oatmeal,

dried blueberries, and

peanut butter chips.

Grease a cookie sheet with butter.

Add all of the cookie dough onto the baking sheet.

Using a rubber spatula or large spoon, gently spread the cookie dough out evenly over the entire bottom of the cookie sheet. Keep the dough about 1/8th of an inch away from all sides of the sheet.

Bake in a preheated oven for about 19 to 20 minutes. Remove the pan from the oven when the dough in the middle of the pan is still slightly soft. 

Let the pan sit on a rack to cool. It should continue to cook a bit more in the middle of the pan from the residual heat.

After 20 minutes, use a large pizza cutter or knife to cut the cookie into bars.

Carefully remove the cookie bars from the pan onto a rack to cool further…

…then enjoy.

Oatmeal, Blueberry & Peanut Butter Chip Cookie Bars

Ingredients

  • 1-1/2 cups flour
  • 1 teaspoon baking soda
  • 1-1/2 teaspoons salt
  • 1 teaspoon ground cinnamon
  • 1 cup butter softened
  • 1 cup brown sugar firmly packed
  • ½ cup granulated sugar
  • 2 eggs
  • 1-1/2 teaspoons vanilla extract
  • 3 cups uncooked old fashioned oats not instant
  • 1 cup dried blueberries
  • 1 package (10 ounces) package peanut butter chips
  • 1 tablespoon butter for greasing the cookie sheet
  • A cookie sheet with sides 17-1/2 by apprx. 11-1/2 inches

Instructions

  1. Preheat oven to 350 degrees F.

  3. In a large mixing bowl, add the butter, sugar, brown sugar, egg and vanilla extract. Beat until light and fluffy. 
  4. Turn the mixer speed to low and slowly add the flour mixture. Once incorporated, turn the mixer to a higher speed until a dough forms.
  5. Using a spatula or large spoon, stir in the oatmeal, dried blueberries, and peanut butter chips. 
  6. Grease a cookie sheet with butter. Add all of the cookie dough onto the baking sheet.
