Cheesy Roasted Garlic Bread

Roasted garlic is the coolest thing.

It couldn’t be easier to make and in no time, the cloves of garlic are spreadable.

Not only does the consistency of the garlic change, but so does the taste.

To my taste buds, roasted garlic has a subtle almost sweet flavor to it.

Roasted garlic is just the first layer of deliciousness on this bread.

Next, a layer of sliced fresh tomatoes with salt and pepper is added and then topped with a big dollop of ricotta cheese and a sprinkle of oregano.

Then two more layers of cheese are added; shredded mozzarella and shredded cheddar cheese.

That’s 3 types of cheese you get in every bite.  yum.

Cheesy Garlic Bread

It’s helpful to bake these slices of cheesy roasted garlic bread in a shallow casserole or baking dish that’s just big enough for all of the slices of bread to fit in (rather than using a large cookie sheet or pizza pan).

This way, when the shredded cheese that’s piled high on the top falls off of the sides of the bread, there isn’t a hardened cheese mess to clean up like there would be if a large pan with extra space were used.

Instead, excess cheese just falls on to another slice of cheesy garlic bread which is a good thing because the more cheese the better.

This delectable garlic bread can be served cut in half as an appetizer, or as a side dish, a semi-main dish with soup or salad, or main dish for a light meatless meal.

For the Roasted Garlic – a bulb of garlic and olive oil

For the Cheese Bread – thick slices of French bread, olive oil, roasted garlic, slices of tomato, salt, pepper, ricotta cheese, dried oregano, shredded mozzarella cheese and shredded cheddar cheese

Here’s how to make it.

For the Roasted Garlic:

Preheat the oven to 375 degrees F.

On a large piece of foil, lay the bulb of garlic.

Then drizzle olive oil on top of the garlic.

Lift up the edges of the foil and squeeze them together to form a “tent”.

Bake in the oven for 25 minutes.

Then remove from the oven and using hot mitts, open the foil.  Let cool.

Once cooled, using the flat edge of a knife or a spoon,

squeeze each garlic clove out of the skin.

Set aside for a moment.

For the Cheese Bread:

In a small to medium size casserole or baking dish…

…lay out the thickly sliced pieces of French bread side-by-side.

Then,

drizzle olive oil on top of each piece of bread and…

…spread the roasted garlic on the bread with a knife.

It’s best if the garlic is a little bit chunky when spreading it.

Next,

lay the slices of tomato on top of the garlic.

Sprinkle salt and…

…pepper on top of the tomatoes.

On top of each tomato, add dollops of ricotta cheese and…

…top with dried oregano.

On top…

…add shredded mozzarella cheese and…

shredded cheddar cheese.

Bake in the oven until the cheese melts (about 25 minutes).

Serve while warm and…

Ingredients

For the Roasted Garlic:

  • 1 bulb garlic

  • 4 thick slices French bread
  • 1 tablespoon plus 1 teaspoon olive oil
  • Roasted garlic
  • 8 slices fresh tomato
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ cup ricotta cheese
  • 1 tablespoon dried oregano
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese

Instructions

For the Roasted Garlic:

  • In a small to medium size casserole or baking dish, lay out the pieces of French bread side-by-side. 
  • Then drizzle olive oil on top of each piece of bread and spread roasted garlic on the bread with a knife. It’s best if the garlic is a little bit chunky when spreading it. 
  • Lay the slices of tomato on top of the garlic. Sprinkle salt and pepper on top of the tomatoes.
  • On top of each tomato, add dollops of ricotta cheese and top with dried oregano.
  • On top, add both types of shredded cheese and bake in a preheated oven until the cheese melts (about 25 minutes). 
  • Serve while warm.
