Avocado, Feta and Salad Pita Sandwich with Tzatziki Sauce

Bring a fresh salad to life by serving it inside a whole wheat pita pocket with homemade Tzatziki sauce.

Pita pocket bread is a great way to enjoy a fresh salad and delicious bread at the same time by adding the salad ingredients right inside of the pita for a scrumptious finger food.

This meatless salad sandwich is made with whole wheat pita pocket bread and filled with arugula, avocado, sliced cucumbers, feta cheese, sliced red bell pepper, two types of raw cabbage and sliced tomato.

The salad is topped with a quick and easy Tzatziki sauce which adds even more freshness and flavor to the sandwich.

Tzatziki sauce is a scrumptious side dish made with plain or Greek yogurt, diced cucumbers, garlic, salt, lemon juice (or vinegar) and fresh herbs such as dill or mint that is often served with Greek food.

It’s generally a fairly thick consistency so it can also be served as a dip.

When all of the Tzatziki ingredients are combined, the taste is so fresh and amazingly delicious.

Tzatziki sauce is traditionally made with Greek yogurt because it’s thicker than regular yogurt.

I happened to have regular plain yogurt on hand so I strained it a bit by putting it in a coffee filter for about 15 minutes before using it.

You may have already noticed this when picking out a package of pita bread to buy, there are generally 2 kinds to choose from:

  1. the type with a pocket that can be opened like in this recipe (these are most often baked in the oven); and
  2. the type without a pocket that are a bit more thick and have a soft texture (these are generally baked on a hot surface)

Here’s how to make it.

For the Pita Salad Sandwich:

For the Vegetables – Slice the cucumber (skin-on), cut the red bell pepper in thin strips, slice the tomato and thinly slice the purple and green cabbage.

Then, cut the avocado in half and remove the seed.

Using a spoon, scoop out the avocado from each half and slice it in about ½ inch thick pieces.

For the Pita Pocket Bread – Cut the pita bread in half and carefully open each piece so that a pocket forms.

The bread tends to be delicate so be careful that it doesn’t tear.

For the Sandwich – On the inside of the pita pockets, add the avocado, tomatoes, feta cheese, cucumber, red bell pepper and both cabbages.

Top with arugula.  Set aside.

For the Tzatziki Sauce:

Diced Cucumber

Cut the skin off of the cucumber and with a small spoon, hollow out the middle to remove the seeds.

Then, dice the cucumber.

In a medium size bowl, add yogurt (if using regular yogurt, strain out the excess liquid), diced cucumber, garlic, dill, and…

Stir together, and add salt and pepper to taste.

Ingredients

For the Pita Salad Sandwich:

  • 2 pieces of whole wheat pita pocket bread cut in half
  • 1 avocado cut in half lengthwise, seed removed, meat scooped out with a spoon and cut into 1/2 thick slices
  • 1/2 cup crumbled feta cheese
  • 1/2 of a whole cucumber, skin on sliced widthwise into thin slices
  • 1/2 cup shredded green cabbage or thinly cut
  • 1/2 cup shredded purple cabbage or thinly cut
  • 1/2 of a red bell pepper stem and seeds removed, sliced
  • 1 tomato sliced
  • 1/2 cup arugula

For the Tzatziki Sauce:

  • 1 cup plain Greek yogurt
  • 1/2 of a whole cucumber, peeled cut in half lengthwise, hollow out the seeds in the middle with a spoon, and dice the cucumber
  • 1 tablespoon fresh chopped dill
  • 1/2 teaspoon diced garlic
  • 1 teaspoon lemon juice
  • 2 dashes salt or to taste
  • 2 dashes ground black pepper

Instructions

For the Pita Salad Sandwich:

  • Carefully open each half of pita bread so that a pocket forms. The bread tends to be delicate so be careful that it doesn’t tear. 
  • On the inside of the pita pockets, add the avocado, tomatoes, feta cheese, cucumber, red bell pepper and both cabbages.  Top with arugula.  Set aside.

For the Tzatziki Sauce:

  • In a medium size bowl, add yogurt (if using regular yogurt, strain out the excess liquid), diced cucumber, garlic, dill, and lemon juice. 
  • Stir together, and add salt and pepper to taste.
  • For Serving - Top the pita sandwich with Tzatziki Sauce and serve. 
  • Serve with a side of arugula topped with the leftover veggies and Tzatziki Sauce.
