Jelly Bean Cupcakes

Ingredients

For the Cupcakes:

  • 1 box (18.25 ounces) white cake mix
  • 1 cup water (quantity according to package instructions)
  • 1/3 cup canola oil (quantity according to package instructions)
  • 3 whole eggs (quantity according to package instructions)
  • 20 large jelly beans (all colors except the black and white ones) each jelly bean cut into 3 to 4 pieces
  • Cupcake liners

For the Frosting:

  • 6 tablespoons butter softened
  • 4-3/4 cups powdered sugar
  • 1/4 cup milk
  • 1-1/2 teaspoons vanilla extract

For the Toppings:

  • 1 cup shredded sweetened coconut
  • 15 drops Green food coloring
  • Jelly beans
  • Candy decorations

Instructions

For the Cupcakes:

  • Preheat oven to 350 degrees F. (or according to package instructions).
  • To a large mixing bowl, add cake mix, water, eggs, and canola oil. Beat with a mixer on medium speed for 2 minutes or whisk by hand for 2 minutes (or follow package instructions). 
  • To the cake batter stir in the cut pieces of jelly beans.
  • Line a cupcake pan with paper cupcake liners (this recipe should yield about 16 cupcakes).  Fill each cupcake liner 2/3's full with batter.
  • Bake in the preheated oven according to package instructions (when a wooden toothpick inserted in the center of a cupcake comes out clean) (about between 18 and 22 minutes). 
  • Carefully transfer the cupcakes to a rack and let them completely cool before frosting them.

For the Frosting:

  • To a medium size bowl, add powdered sugar, softened butter, vanilla extract, and milk. 
  • Set a mixer to the slowest speed and beat the ingredients very carefully so that the powdered sugar doesn’t fly out of the bowl.
  • Once the powdered sugar starts to mix in with the butter and milk (about two minutes), increase the speed on the mixer and beat the ingredients until smooth (about another 3 or 4 minutes). Set aside for a moment while preparing the green coconut grass topping.

For the Toppings:

  • For the Green Grass -  To a small bowl, add shredded coconut and 15 drops of green food coloring.  Mix together until the coconut is coated.  
  • If a darker color of green is preferred, add a few more drops of green food coloring and mix together.   
  • Before frosting the cupcakes, push a whole jelly bean into the top of the cupcake down about an inch.
  • Frost each cupcake one at a time and right after frosting it add the green shredded coconut (so it will stick to the frosting), jelly beans and decorative candies on top.

Notes

TIP:

  1. For a kid's party, a fun thing to do is put a particular colored whole jelly bean in just one of the cupcakes and whoever gets that cupcake wins a prize.
