Ham, Turkey & Swiss Jicama Slaw Sandwich

Energize a ham, turkey and Swiss cheese sandwich with a unique jicama slaw and pretzel bread rolls.

Ingredients

For the Jicama Slaw:

  • 1/2 cup peeled and shredded jicama
  • 1/2 cup shredded radishes about 4 or 5 radishes
  • 1/2 cup shredded cucumber, skin on about 1/3 of a cucumber
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon (heaping) mayonnaise
  • 1/4 teaspoon salt
  • 2 dashes pepper

For the Sandwich:

  • 2 pretzel sandwich rolls or roll of your choice
  • 2 tablespoons mayonnaise
  • 4 tablespoons Dijon mustard
  • 8 slices of deli turkey or your favorite sliced meat
  • 8 slices of deli Black Forest Ham or your favorite sliced meat
  • 1 large tomato sliced
  • 2 dashes ground black pepper
  • 4 slices Swiss cheese

Instructions

For the Jicama Slaw:

  • To a medium size bowl, add the shredded jicama, radish, cucumber, apple cider vinegar, salt, mayonnaise and pepper.  Stir together.  Set aside for a moment.

For the Sandwich:

  • Cut the bread lengthwise but not all the way through; leave the bottom-most part of the bread uncut and open both pieces. 
  • On the cut side of both pieces of bread, spread mayonnaise and mustard.  
  • Roll each piece of meat in a wide loose roll, and lay the meat across both halves of the roll.
  • Lay the tomatoes over the meat and top with a couple dashes of pepper. 
  • Top with slices of cheese.  
  • Stir the slaw one more time and add it on top of the cheese.
  • Fold both pieces of the rolls up to make the sandwich and cut in half diagonally. 
  • Serve right away.
