For the Sausage - Shape the sausage into patties; they tend to shrink a bit after cooking so make the patties a little larger than the diameter of the biscuit and as thin as possible (the entire package of sausage should yield 7 patties so there should be 2 extra).
Heat a large skillet on medium heat and add the sausage patties. Turn the patties over as they cook so that they cook evenly.
Let cook until the patties start to brown and are thoroughly cooked.
After the sausage patties are cooked, transfer them onto a paper towel-lined plate to drain off any excess grease. Set aside for a moment
For the Eggs - A microwave egg cooker is a handy way to make eggs in a size that fits well in a biscuit. If you don’t have one of these handy gadgets an option is to make fried eggs and just fold them so they fit in the biscuit.
If a microwave egg cooker is used, put the egg cooker on a microwave-safe plate. Then put an egg in each cup and poke holes in the yoke with a fork.
Then add a smidgen of water in each one of the cups with the eggs, and snap the egg cooker shut.
Lay a paper towel over the top of the egg cooker. Cook for 1 minute 38 seconds (time may vary depending on the microwave).
Using a small spoon, remove the eggs from the cooker. Set aside for a moment.
Assemble the Sandwich - On each cut-side of the biscuits, spread butter and raspberry jam or jelly.
To the top halves of each biscuit, place a slice of cream cheese over the raspberry jam.
To the bottom half of each biscuit, add another slice of cream cheese, a sausage patty, and an egg.
Salt and pepper the egg to taste.
Cover with the top slice of the biscuit and serve while warm.
