Blueberry Lemonade Smoothie

There's a little tart and just enough sweet in this smoothie that's ready in minutes and is perfect for breakfast, a snack, or a light dessert.

  • Zest from 1 lemon (reserve 1/4 teaspoon of zest for garnish)
  • Juice from 1 lemon
  • 2 teaspoons flaxseed (optional)
  • 1 cup blueberries
  • 1 cup Greek plain nonfat yogurt
  • 2 tablespoons honey or add to taste
  • 1/4 cup grapefruit juice
  • 2 cups ice cubes
  • 4 pinches lemon zest for garnish
  • 2 slices lemon (optional for garnish)


  • Blender


  • In a blender add the lemon zest, lemon juice, flaxseed, blueberries, yogurt, honey, grapefruit juice and ice. Blend on the smoothie setting. 
  • For garnish, top with a couple pinches of lemon zest.  Serve right away while it's ice cold.
