Sour Apple Rice Krispie Treats

These crispy, chewy and colorful rice krispie treats made with green sour apple marshmallows are a fun and delicious twist on a classic finger food dessert.

Ingredients

For the Krispie Treats:

  • 1 package (7 ounces) Mallo Licious Sour Apple Marshmallows the entire package is used for the krispie treats
  • 6 cups puffed rice cereal with "Spring Colors"
  • 3 tablespoons butter (salted), softened (for the krispie treats)
  • 2 teaspoons butter, softened (to grease the casserole dish)

For the Topping:

  • Light blue sugar sprinkles (as close as possible color matched to the light blue puffed rice cereal; in this recipe sprinkles from Wilton were used)
  • Light green sugar sprinkles (as close as possible color matched to the light green puffed rice cereal; in this recipe sprinkles from Wilton were used)
  • Optional - Marshmallow creme used to stick the sour apple marshmallow decoration on top of each krispie treat (or other festive/holiday edible decor can be used)
  • 1 package (7 ounces) Optional - Mallo Licious Sour Apple Marshmallows if adding sour apple marshmallows as decoration; a second package of sour apple marshmallows would be needed (since an entire package is used to make the krispie treats)

Equipment

  • Casserole Dish (a size 12 x 8 is used in this recipe)

Instructions

For the Krispie Treats:

  • Grease the inside of a casserole dish or pan with softened butter (for this recipe a 12 x 8 size casserole dish is used). Set aside.
  • In a large bowl, add the puffed rice cereal. Set aside.
  • In another large bowl, (one that can go in the microwave) add the softened butter. Make sure to use softened butter so that it will melt quickly along with the marshmallows when warmed in the microwave.
  • To the microwaveable large bowl, add all of the sour apple marshmallows that are in the package. The package generally has 23 sour apple marshmallows in it.
  • Warm the marshmallows and butter in the microwave for 40 seconds. The warmed marshmallows should look soft but not completely melted.
  • Then using a soft spatula, gently stir the marshmallow mixture just enough until it's creamy.
  • Be careful not to over-warm or over-stir the marshmallow mixture or it will seize up (be sticky and stiff).
  • To the bowl with the puffed rice cereal, add the melted marshmallow mixture.
  • Using a soft spatula or a large sturdy spoon, gently mix the ingredients together until the cereal is coated with the marshmallow mixture.
  • Transfer the mixture into the greased casserole dish. Use a soft spatula to press the mixture evenly into the dish.  You can also use your hands with just a little water on them to press the mixture into the dish.

For the Topping:

  • For the Sugar Sprinkles - The sprinkles need to be added to the top of the krispie treats as soon as possible so that they will stick.
  • Add the light blue and green sugar sprinkles evenly on top of the krispie treats.
  • Cover with plastic wrap. Let the krispie treats sit on the counter for about an hour or until they're set and can be cut. Then cut into 12 squares (or the desired servings).

These can be served right after cutting them unless sour apple marshmallows are used as a decoration; then there's one more step as follows.

  • For the Sour Apple Marshmallow Decoration (Optional) - a half marshmallow is used as decoration for each krispie treat
    Using kitchen scissors (that are for food only), cut the desired amount of sour apple marshmallows in half lengthwise (from bottom to top).
    For example, for 12 krispie treats, 6 sour apple marshmallows are needed.
  • Try to make the cut so that the leaf on top of the marshmallow shows equally on each side.
  • Then using a dinner knife or small spoon, put a dollop of marshmallow creme on the back (cut) side of each halved sour apple marshmallow and stick it on the top of each krispie treat.

Notes

TIPS:

  1. Make sure to use softened butter so that it will melt quickly along with the marshmallows when warmed in the microwave.
  2. Be careful not to over-warm or over-stir the marshmallow mixture or it will seize up (be sticky and stiff).
  3. The sprinkles need to be added to the top of the krispie treats as soon as possible so that they will stick.
