Heavy duty foil
Instructions
Preheat oven to 350 degrees F.
For the Marinade:
In a bowl, combine juice from a grapefruit, soy sauce, water, brown sugar, ginger, onion, garlic, red pepper flakes and pepper. Whisk together and set aside.
For the Salmon:
On a sheet pan or pizza pan, lay a large piece of heavy duty foil.
On the foil, place the pieces of salmon (skin side-down if there is skin on the salmon).
Pour the marinade over the salmon making sure that it stays on the foil.
Pull all of the sides of the foil up together to make a "tent" and roll the top edges tightly together to seal the tent.
Set the foil packet on a small cookie sheet or pizza pan.
Bake the salmon in a preheated oven (at 350 degrees F.) until it reaches the desired doneness (about 10 minutes).
Salt to taste and serve warm over warm rice. Garnish with fresh parsley.
