In a blender, add blueberries, fresh lime juice, fresh mint leaves, honey and water.
Blend on the juice or smoothing setting (or other high-speed setting).
Strain Blended Blueberry Mixture:
Since the blended blueberry mixture is relatively thick, the mesh strainer will need to be rinsed out with water after each use.For best results, the blueberry mixture will need to be strained twice.
Set a mesh strainer across the top of a large bowl or container with a pouring spout. Make sure that the strainer is level and securely rests on the top edges of the container.
First Time Straining the Blueberry Mixture:
Pour the blueberry mixture into the strainer until the mixture reaches close to the top edges of the strainer.
Using a spatula or spoon, move the residual blueberry mixture in the bottom of the strainer until all of the juice runs through the strainer.
Rinse the strainer to remove the remnants left from straining the mixture and continue this process for the remaining blended blueberry mixture.
Second Time Straining the Blueberry Mixture:
Then strain the blueberry mixture again for a second time repeating the process.
For the Agua Fresca:
Add the twice-strained blended blueberry mixture to a large pitcher. Add water and stir until incorporated.
Chill in the refrigerator before serving.
Serve:
Serve over ice and garnish.
Garnish:
Garnish with fresh blueberries, thin slices of fresh lime and small sprigs of mint and, or mint leaves.
