Instructions
Fajita Sauce:
To a medium size bowl, add chopped garlic, olive oil, cumin, salt, onion powder, pepper, sugar, Worcestershire sauce, the juice from a whole lime, and chipotle chili powder. Whisk together.
Transfer the sauce into a large shallow bowl or casserole dish. Set aside.
Marinate the Vegetables:
After cutting the vegetables, whisk the fajita sauce again and add the vegetables to the shallow bowl.
Using cooking tongs, mix the vegetables with the sauce to coat them. Let marinate for an hour.
Prepare the Chicken:
After the vegetables marinate, cut the chicken breast into lengthwise slices and set aside for a moment.
Sauté the Vegetables:
Heat a large skillet on medium heat. Add olive oil and the marinated vegetables (reserve about 2 tablespoons of fajita sauce in the shallow bowl). Stir as they cook.
Sauté the vegetables for about 4 to 5 minutes which should be about the time that they start to turn brown around the edges.
Cook the Chicken Fajitas:
Slide the vegetables towards the outer edges of the pan to make space in the middle of the pan. Then add the chicken and remaining marinade in the middle of the pan.
Stir together. As the fajitas cook, stir occastionally until the chicken is thoroughly cooked (about 5 to 7 minutes).
Serve and Garnish:
Serve warm with warm tortillas, rice, black or pinto beans. Top with sour cream and garnish with cilantro leaves.
