Triple-Decker Ground Beef Sloppy Joes

A triple twist to a classic sandwich.

Ingredients

For the Sloppy Joe:

  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped onion white or yellow
  • 1 pound ground beef
  • 1 cup ketchup
  • 1 cup water
  • 1 teaspoon hot sauce
  • 2 teaspoons olive oil
  • 1 teaspoon ground black pepper
  • 2 dashes salt or to taste

For the Sandwich:

  • 3 whole wheat buns plus 3 bottom pieces of the buns
  • Sloppy Joes
  • 2 cups shredded (or thinly sliced) cabbage
  • 6 slices of red bell pepper
  • 6 slices of red onion

Instructions

For the Sloppy Joe:

  • Heat a large skillet on medium heat and add olive oil.   
  • To the pan, add bell pepper and onion.  Stir together. 
  • To the pan, add the ground beef and stir.  With a heat resistant spatula, break up the ground beef so that the pieces are all about the same size.
  • Continue to cook until the ground beef starts to brown and is cooked through.  
  • Once the ground beef is done, remove it from the skillet onto a paper towel-lined plate to drain off any excess grease.  
  • Add the ground beef mixture back into the hot skillet.
  • To the pan, add ketchup, hot sauce and water.  Stir.  Turn the heat down to low and let simmer while stirring occasionally until the sloppy joe mixture thickens (about 20 minutes)
  • Do a taste test and add more salt and, or hot sauce if needed.

For the Sandwich:

  • To serve, place the bottom of the buns cut side-up on 3 serving dishes and top with the warm sloppy Joe mixture.  
  • Then top with shredded cabbage, sliced red bell pepper, and sliced onions. 
  • Top each sandwich with another bottom piece of the bun and add more of the sloppy joe mixture on top. 
  • Lastly, add more cabbage, red bell pepper and sliced onion before adding the top piece of the bun.
  • Serve warm.
