Blueberry Lemonade Smoothie

There's a little tart and just enough sweet in this smoothie that's ready in minutes.

Ingredients

For the Smoothie:

  • 1/4 cup grapefruit juice
  • Juice from 1 lemon
  • Zest from 1 lemon (reserve 1/4 teaspoon of zest for garnish)
  • 2 tablespoons honey or add to taste
  • 1 cup Greek plain nonfat yogurt
  • 1 cup blueberries
  • 2 teaspoons flaxseed optional
  • 2 cups ice cubes

For Garnish:

  • 4 pinches lemon zest optional
  • 2 slices of fresh lemon optional

Equipment

  • Blender

Instructions

For the Smoothie:

  • In a blender add grapefruit juice, lemon juice, lemon zest, honey, yogurt, blueberries, flaxseed (optional), and ice.
    Blend on the smoothie setting until smooth.
  • After the smoothie is blended, do a taste test and add more honey if needed.
  • Serve right away while the smoothie is ice cold.

For Garnish:

  • Add a slice of fresh lemon to the rim of each serving glass.
    Or top the smoothie with a couple pinches of lemon zest (for each serving)
