Macadamia Nut Toffee Cookies
These cookies have a texture similar to a shortbread cookie and it's hard to stop a just one.

Ingredients
For the Cookie Dough:

cup
butter (salted)
softened
1/2
cup
granulated sugar
for the cookie dough

teaspoons
instant coffee granules
1/4
teaspoon
salt
1/2
teaspoon
vanilla extract

all-purpose flour

Heath Toffee Bits
For the Cookie Dough Coating:
3/4
cup
finely chopped macadamia nuts
1/4
cup
granulated sugar
Instructions
Preheat oven to 300 degrees.
For the Cookie Dough:
To a large mixing bowl, add butter, sugar, instant coffee granules, salt and vanilla.
Beat with a mixer until creamy.
To the butter mixture, slowly beat in the flour a little at a time.
To the bowl, add toffee bits. With a sturdy spoon, stir the toffee bits into the dough. Set aside.
For the Cookie Dough Coating:
For the Macadamia Nuts
- to a small bowl, add the chopped macadamia nuts.
Drop the cookie dough by the teaspoonful into the bowl of chopped macadamia nuts, and roll to coat the dough shaping it into a ball.
Place the balls of cookie dough onto an ungreased cookie sheet leaving even, empty spaces in between each dough ball.
With the back of a spoon, flatten each ball of dough just a little and add a sprinkle of sugar on the top of the flattened cookie dough.
In a preheated oven, bake the cookies slowly just until the edges are very lightly browned
(about 20 to 25 minutes)

Remove the cookies from the oven and transfer them onto a cooling rack. Let cool.
Serve by themselves or as an ice cream sandwich with coffee ice cream in between two cookies.
