Macadamia Nut Toffee Cookies
These macadamia nut toffee cookies have a texture similar to a shortbread cookie and it’s hard to stop at just one.
These macadamia nut cookies are not particularly sweet, and the texture is similar to a shortbread cookie.
This cookie dough is made with toffee chips in it and the outside of the dough is rolled in coarsely chopped macadamia nuts.
Since the macadamia nuts are on the outside of these cookies, the nuts get slightly toasted when the cookies are baked.
And the slightly toasted macadamia nuts add a wonderful flavor to the cookie.
While the cookies are baking, you can definitely smell the nuts as they toast.
I especially like the toffee bits and very subtle coffee flavor in these cookies.
Let’s check out the ingredients.
Cookie Dough – Butter, granulated sugar, instant coffee granules, salt, vanilla extract, flour and Heath toffee bits
Cookie Dough Coating – Finely chopped macadamia nuts, granulated sugar
HOW TO MAKE THIS RECIPE

Preheat oven to 300 degrees F.
For the Cookie Dough:
To a large mixing bowl add butter, sugar, instant coffee granules, salt and vanilla.
Beat with a mixer until creamy.
To the butter mixture, slowly beat in the flour a little at a time.
To the bowl, add toffee bits.
With a large sturdy spoon…
…stir the toffee bits into the cookie dough.
Set aside.
For the Cookie Dough Coating:
Finely chop the macadamia nuts.
To a small bowl, add the chopped macadamia nuts.
Drop the cookie dough by the teaspoonful into the bowl of chopped macadamia nuts and roll to coat the dough shaping it into a ball.
Place the balls of cookie dough onto an ungreased cookie sheet leaving even empty space in between each dough ball.
With the back of a spoon, flatten each ball of dough just a little and add a sprinkle of sugar to the top of the flattened cookie dough.
In a preheated oven (at 300 degrees F.)…
…bake the cookies slowly until the edges are very lightly browned (about 20 to 25 minutes).
Remove the cookies from the oven and transfer them onto a cooling rack.
Let cool.
Serve the cookies by themselves or as an ice cream sandwich with coffee ice cream in between 2 cookies.

- 1/2 teaspoon vanilla extract
- 1-1/4 cup all-purpose flour
- 1 cup Heath Toffee Bits
For the Cookie Dough Coating:
