Breakfast for Dinner Ideas

Do you ever just stare into the fridge or pantry with a blank look on your face thinking what in the world am I going to make for dinner?

Next time this happens or even sooner, think breakfast.

I like making breakfast for dinner because it’s light, easy to make, and generally the ingredients are on hand.

And if you’re really hungry, try adding some potatoes, chili, or meat into the mix.  They taste so good with eggs.

Breakfast meals are also great for using up leftovers like veggies or meat.

Sometimes I get over zealous when at the grocery store and buy a lot of veggies thinking that I can make this, or that recipe.  When in reality I run out of time and the veggies are staring up at me from the veggie drawer giving me dirty looks.

Especially mushrooms, they don’t last very long so my solution is to sauté them up and make scrambled eggs with them.  It’s actually really good and fills me up a little longer than just eggs would.

So there you have it, breakfast for dinner is a good thing.  And a great reason to buy more eggs when they’re on sale too.
