Chipotle Shrimp Guacamole

This homemade guacamole with Chipotle shrimp makes a great appetizer or even a light meal.
Have you ever been in a restaurant and ordered an appetizer for lunch or dinner?
Not only is it a treat having an appetizer all to myself, but sometimes it’s just what I’m craving.

One of the best appetizers I had for dinner at a restaurant was a plate with 3 types of hummus on it.
I don’t even remember the type of bread that came with it because each flavor of hummus tasted so amazing.
This Chipotle Shrimp Guacamole (and tortilla chips to go with it, of course) is one of those appetizers that could also be a light meal.
About this Recipe
In this recipe, the shrimp is tossed in a homemade Chipotle seasoning mix, and sautéed in olive oil.
Then the cooked shrimp is cut into small chunks and added to homemade guacamole on the inside and out (as garnish).
Let’s check out the ingredients.

Chipotle Shrimp – Large raw shrimp (peeled, deveined and tails off), Chipotle chili powder, granulated garlic, ground cumin, salt, pepper and olive oil

Guacamole – Avocados, fresh lime juice, cilantro, red onion, jalapeno pepper, Roma tomato, salt and pepper
HOW TO MAKE THIS RECIPE

Chipotle Seasoning

In a small to medium-size bowl, add Chipotle powder, cumin, garlic, salt and pepper.

Whisk or mix together with a fork.
Chipotle Shrimp

In the seasoning bowl, add the washed, peeled (tails-off), and deveined shrimp.

With tongs, toss the shrimp until all sides of the shrimp are coated with the spice mixture.
Set aside for a moment.
Cook the Shrimp

Heat a medium size skillet on low to medium heat and add olive oil.

Add the shrimp to the pan.

When the bottom sides of the shrimp turn white (about 2 minutes), turn them over.
Cook the other side of the shrimp for about the same amount of time or until the shrimp are completely cooked.
Transfer the shrimp from the pan onto a plate and set aside to cool while making the guacamole.
Guacamole
Tomato, Onion, Jalapeno and Cilantro – Finely chop the tomato, red onion, jalapeno (stem and seeds removed) and cilantro.
Set aside.

Avocado – In a medium size bowl, use a fork to mash the avocado and add lime juice.
Stir together.

Combine the Ingredients – To the bowl with the mashed avocado, add chopped red onion, jalapeno, cilantro, tomatoes, salt and pepper.

Gently stir the ingredients together.
Do a taste test and add more salt if needed.

Set aside for a moment.
Chipotle Shrimp Guacamole – Assembly

Cut the shrimp (all but one; save for garnish) into small chunks.

Add about 3/4’s of the cut shrimp to the guacamole (reserve some for garnish) and…

…gently stir the guacamole and pieces of shrimp together.
Garnish

Transfer the guacamole to a serving bowl and garnish with a sprig of cilantro, a lime wedge…

…and the remaining pieces of the cut shrimp, plus one whole shrimp.
Serve

Serve right away with your favorite tortilla chips.

Chipotle Shrimp Guacamole
Ingredients
Chipotle Seasoning:
- 1/2 teaspoon Chipotle chili powder
- 1/8 teaspoon ground cumin
- 1/4 teaspoon granulated garlic
- 1/8 teaspoon salt
- 1/8 teaspoon ground black pepper
Chipotle Shrimp:
- 9 large whole raw shrimp (peeled, deveined, tails-off) In total, 9 large cooked shrimp are needed (reserve 1 whole cooked shrimp for garnish)
- Chipotle Seasoning
- 2 tablespoons olive oil
Guacamole:
- 3 ripe (medium size) Hass avocados meat removed and mashed
- 1 lime juiced
- 1 large jalapeno pepper stem and seeds removed, diced (or 2 jalapenos if more heat is preferred)
- 1 large clove garlic peeled and diced
- 2 tablespoons (heaping) finely chopped red onion or a yellow or white onion is fine too
- 2 tablespoons (heaping) chopped cilantro
- 2 Roma tomatoes pulp removed and finely chopped
- 1/4 teaspoon salt or to taste
- 1/4 teaspoon ground black pepper
Chipotle Shrimp Guacamole:
- Guacamole
- about 3/4's of the cooked Chipotle shrimp that are cut in chunks reserve about 1/4 of the cut shrimp for garnish
Garnish:
- about 1/4 of the cut cooked Chipotle Shrimp
- 1 cooked Chipotle shrimp one large shrimp reserved from the total cooked Chipotle shrimp
- a sprig of cilantro optional
- a wedge of lime optional
