Chipotle Chicken Nugget and Honey Dijon Sliders

Chipotle Chicken Sliders

You know these sliders are going to taste good when each ingredient tastes scrumptious on its own.

There’s just something about sliders served on super soft rolls that makes them taste really really good.

One of the softest rolls that comes to my mind are Kings Hawaiian rolls.

They’re so soft that you have to be careful not to squeeze too hard when taking them out of the package so they’ll keep their shape.

And there’s even a wheat bread version of these delicious rolls.

The chicken nugget in the middle of these sliders is made with a layer of Chipotle chile seasoning and coated with a layer of flour just before the nuggets are lightly fried.

They taste wonderful on their own, but no snacking until after the delectable chicken nuggets are made into sliders because they taste amazing with the honey Dijon sauce.

And have you ever tried chicken nuggets dipped in a honey Dijon sauce?  It’s soooo good.

This chipotle chicken nugget slider is served “sideways”,  more like a mini hot dog bun style slider.

The slider roll is only cut on one side so that when serving the slider cut-side up, the honey Dijon sauce stays inside of the slider.

Serve these sliders as a main dish, appetizer or as a finger food on game day.

For the Honey Dijon Sauce – mayonnaise, honey and Dijon mustard

For the Chipotle Chicken Nugget Sliders – boneless skinless chicken breast, Chipotle chile powder, flour, salt, pepper, canola oil, and Kings Hawaiian wheat rolls

Here’s how to make it.

For the Honey Dijon Sauce:

In a small bowl, add the mayonnaise, Dijon mustard and honey.

Whisk together and set aside for a moment.

For the Sliders:

For the Chicken – Cut each chicken breast into 4 equally sized pieces and add them to a medium size bowl or plate.

Seasoning the Chicken – Top the chicken with Chipotle powder,

pepper,

and salt.

Coat the pieces of chicken with the spices on all sides.

Coating the Chicken with Flour – Add the flour to a separate small bowl and coat each piece of chicken with the flour.

Set aside for a moment.

Pour Canola Oil in Skillet

Frying the Chicken – Heat a medium size skillet on medium heat and add canola oil.

Add a pinch of flour to the oil and when it bubbles then add the pieces of chicken to the pan.

When the bottom side of the chicken turns a golden color (about 3 or 4 minutes) turn the chicken over.

Continue to turn the chicken as it cooks until all sides of the chicken are a golden color and cooked through (about 4 or 5 more minutes).

If the chicken is browning too quickly turn the heat down just a bit.

Transfer the chicken from the pan on to a small rack to drain off the excess oil.

For the Sliders – Partially cut the rolls in half from side to side leaving a small section uncut so it resembles a hot dog bun.

…then add a fried chicken nugget to each bun, and drizzle more honey Dijon sauce on top of the chicken.

Ingredients

For the Honey Dijon Sauce:

  • ¼ cup mayonnaise
  • 1 tablespoon plus 1 teaspoon Dijon mustard
  • 1 tablespoon plus 1 teaspoon honey

For the Chipotle Chicken Nugget Sliders:

  • 2 boneless skinless chicken breasts cut each chicken breast into 4 equally sized pieces
  • 2 teaspoons Chipotle chile powder
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 cup flour
  • ½ cup canola oil
  • 8 Kings Hawaiian Wheat Bread Rolls
  • Honey Dijon sauce
  • Fresh chives cut into 2 inch long pieces

Instructions

For the Honey Dijon Sauce:

  • In a small bowl, add the mayonnaise, Dijon mustard and honey.  Whisk together and set aside.

For the Chipotle Chicken Nugget Sliders:

  • For the Chicken - To a medium size bowl, add the pieces of chicken, Chipotle powder, pepper, and salt. Coat the pieces of chicken with the spices on all sides. 
  • In a separate bowl, add flour.  Lay each piece of seasoned chicken in the flour and coat all sides with the flour.  Set aside for a moment.
  • In a medium size skillet add the canola oil and heat on medium heat. Add a pinch of flour to the oil and when it bubbles then add the pieces of chicken to the pan.

  • Garnish with the chives and serve warm with the uncut side of the roll facing down (like a mini hot dog).
