Banana Bread with Peanut Butter Streusel

Just imagine this…..a super delicious, moist piece of banana bread slathered with butter.

Wait!  There’s more. 

Then imagine that this super delicious, moist piece of banana bread slathered with butter had a crumbly, sweet topping on it.

Wait again!  There’s even more. 

Then…..imagine that this super delicious, moist piece of banana bread slathered with butter had a crumbly, sweet topping with peanut butter in it!

Now you don’t have to imagine anymore because….

Here is the recipe!

This banana bread is sooo good that I can’t put it into words.

You’ll for sure have to make this because it’s the best.

Shoot…..I’m eating some of this banana bread while I’m typing this for you right now.  A piece of the streusel just fell in between the “j” and the “k” keys on my computer and I can’t get it out.

Seriously, it really did….I hate when this happens.

Let’s check out the ingredients:

For the bread – brown sugar, granulated sugar, and flour….

….baking powder, egg, milk, canola oil, and salt….

….and some overripe bananas.

For the streusel – butter, flour, brown sugar and peanut butter.  yum.

Here’s how to make it.

Preheat oven to 350 degrees F.

For the Bread:

Grease the bottom and sides of a 9-inch loaf pan with butter.  Set aside.

In a large bowl, add the flour.

Then…..

…..add the sugar.

Next…

…add the brown sugar….

…..and the baking powder….

….then the salt…

….canola oil.…

….milk.…

…and the egg. 

Just a quick tip regarding adding eggs to any type of batter;

Rather than adding the egg directly into batter, first put it in a separate bowl or measuring cup. 

Give it a look-over to make sure it doesn’t have a trace of blood in it.  If it does, dispose of the egg and get a new bowl to put another egg in. 

If the egg looks good then put it in the batter.  This is a good habit to get into so you don’t put a bad egg directly in your mixture or batter.

Next….

Beat all of the ingredients together.  Set aside for just a sec while you mash the bananas.

Peel the bananas and add them to a medium size bowl.

Smash the bananas with a fork so that they’re a little bit on the chunky side. 

When mashed, 3 medium size bananas should yield about 1 ¼ heaping cups.

Then add the bananas to the flour and sugar mixture. 

Beat all of the ingredients just long enough so that the batter becomes thin enough to pour (about 2 minutes).

Add the batter to the greased loaf pan and set aside while you make the streusel.

For the Streusel:

Add the butter to a medium size bowl that can go in the microwave. 

Heat the butter in the microwave for about 20 seconds.

Then add the flour….

…the brown sugar….

…and the peanut butter.

Mix and mash the ingredients together until you see crumbles of deliciousness. 

Depending on the consistency of the peanut butter that you use, you may need to add a little bit more flour to get to the crumbles-of-deliciousness stage.

Sprinkle the streusel on top of the batter with a spoon. 

Use the back of the spoon to lightly pack the streusel into the batter just a little bit.

Bake in a preheated oven for about 65 to 70 minutes or until a wooden toothpick inserted in the center comes out clean.

Cool slightly. 

Then use a knife to loosen the bread from the sides of the pan and carefully remove the bread from the pan. 

The streusel should stick to the top of the bread. 

A few pieces of the streusel may fall off of the top….but this is a good thing because since you’re the cook, you are the legal owner of these goodies and can scarf them up.

Let cool completely before slicing. 

When it’s time to cut a piece for yourself….make it’s a super huge slice!

Then….

….slather it with butter (you’ll be so glad you did).

Ingredients:

For the Bread:
2 ½ cups flour
½ cup granulated sugar
½ cup packed brown sugar
3 ½ teaspoons baking powder
1 teaspoon salt
3 tablespoons canola oil
1/3 cup milk
1 egg
3 overripe bananas (medium size)

¼ cup flour (heaping)
1 tablespoon brown sugar
1 tablespoon chunky peanut butter

  1. I found this through pinterest and just made them. They are awesome! I always have to incorporate peanut butter into my desserts because my husband loves it. These were a hit with him! I made muffins and baked them for 25 minutes. Seriously… delicious.
