Banana Bread with Peanut Butter Streusel
This banana bread with peanut butter streusel will have you coming back for more.
Banana bread not only tastes wonderful but it’s also a great way to use up overripe bananas.
It makes a delightful breakfast, snack and dessert.
And it’s even better when made with other flavorful ingredients like in this recipe with peanut butter streusel.
In this recipe the banana bread is hearty and moist, and the peanut butter streusel is an added bonus with each bite.

HOW TO MAKE THIS RECIPE

Preheat oven to 350 degrees F.
For the Bread:
Grease the bottom and sides of a 9-inch loaf pan with butter.
Set aside.
In a large mixing bowl add flour,
…granulated sugar,
…brown sugar,
…baking powder,
…salt,
…canola oil,
…milk,
…and an egg.
TIP – The most important tip for making this recipe is the same one with all recipes that have eggs in them…never crack an egg over food.
It’s a good idea to crack each egg in a separate bowl first before adding it in with other ingredients (or in with other eggs).
This way, if the egg is bad (i.e. smells off or bad, or is discolored), it can be discarded before contaminating the other ingredients.
Beat the ingredients together.
Set aside for just a moment.
To a medium size bowl, add peeled bananas.
With a fork, mash the bananas (with some small chunks).
When mashed, 3 medium size bananas should yield about 1-¼ heaping cups.
To the mixing bowl, add the mashed bananas.
Beat the ingredients just long enough so that the batter becomes thin enough to pour (about 2 minutes).
To the greased loaf pan, add the batter.
Set aside.
For the Streusel:
To a medium size microwavable bowl, add butter.
Warm the butter in a microwave for 20 seconds.
To the bowl, add flour…
…brown sugar…
…and peanut butter.
Mix and mash the ingredients together until the mixture turns into crumbles.
Depending on the consistency of the peanut butter that’s used, a little more flour may need to be added to get a crumble texture.
For the Banana Bread with Peanut Butter Streusel:
Using a spoon, sprinkle streusel evenly on top of the banana bread batter.
Use the back of the spoon to lightly pack the streusel into the batter just a little bit.
Bake in a preheated oven (at 350 degrees F.) until a wooden toothpick inserted in the center comes out clean (about 65 to 70 minutes).
Let the bread cool just enough to handle the bread pan; use a knife to loosen the bread from the sides of the pan and carefully remove the bread from the pan.
Let cool completely on a cooling rack before slicing.
Serve warm or chilled.

For the Bread:
- 2-1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup (packed) brown sugar (light or dark brown sugar)
- 3-1/2 teaspoons baking powder
- 1 teaspoon salt
- 3 tablespoons canola oil
- 1/3 cup milk
- 1 egg
- 3 medium size overripe bananas, peeled and mashed (with some small chunks) the mashed bananas should equal 1-1/4 heaping cups
For the Streusel:
- 2 tablespoons butter (salted)
- 1/3 cup (heaping) all-purpose flour
- 1 tablespoon brown sugar
- 1 tablespoon chunky peanut butter

For the Banana Bread:
- Preheat oven to 350 degrees F.
