Chewy White Chocolate and Tart Cherry Cookies
These chewy white chocolate and tart cherry cookies don’t require a special occasion to bake. Just because, is a good reason.
These white chocolate and tart cherry cookies are chewy in the middle and have a little sweet and a little tart in each bite.
The edges have a slight crunch that’s so good when biting into them because along with a crunch comes the chewy middle.
The white chocolate in these cookies is a pretty contrast to the deep red color of the dried cherries.
Where to Find Dried Cherries
Dried cherries can be hard to find in a grocery store because they may not be located on the aisle with the baking ingredients.
I generally find them in same section as where the raisins are.
Or, if the grocery store has bulk-type bins with nuts, grains and the like, they may also have dried cherries there.
These cookies are adapted from the Nestle Toll House Cookie recipe only instead of chocolate chips, white chocolate chips or morsels (small chucks of white chocolate would work good too), and dried cherries are added.
Let’s check out the ingredients.
Flour, sugar, baking soda, salt, brown sugar, butter, eggs, white chocolate chips, and dried cherries
HOW TO MAKE THIS RECIPE
A printable recipe with the measurements and instructions is located at the bottom of this post.
Preheat the oven to 375 degrees F.
In a medium size bowl, add flour…
baking soda,
and salt.
Stir the dry ingredients together and set aside.
In a large mixing bowl add softened butter,
sugar,
brown sugar,
vanilla extract,
and beat until creamy.
Then,
mix in the eggs.
On low speed (so the flour doesn’t come fly out of the bowl), gradually add the flour mixture in with the cookie dough mixture.
Mix well.
Next,
to the mixing bowl, add the white morsels…
and…
…dried cherries.
Using a large sturdy spoon or spatula,
stir all ingredients together.
On an ungreased cookie sheet, drop the cookie dough by about 2 rounded teaspoons.
For a chewy cookie, bake in a preheated oven (at 375 degrees F.) until the cookies look like they’re not quite done in the middle (about 7 to 7-1/2 minutes depending on your oven and size of the cookie).
Remove from the oven and carefully transfer the cookies from the baking sheet with a spatula on to a wire rack and let cool a few minutes until the cookies are set.
As the cookie sits on the rack there should be just enough heat left for the middle to firm up but still be chewy.
