Hot Cherry Pie Rolls

This is seriously good, and super easy to make.

This recipe is my rendition of an amazing dessert at one of my favorite restaurants.

The cherry pie rolls can be made ahead of time and then cooked right before serving.

These pie rolls are best when served right after cooking so that the outside crust is crispy and the warmth of the pie makes the vanilla ice cream slightly melt over the entire dessert.

Let’s check out the ingredients.

Canned cherry pie filling.

Vanilla ice cream.

Whipped topping or whipped cream.

Maraschino cherries with stems (and powdered sugar) for garnish

Canola oil and large flour tortillas.

Here’s how to make it.

Put a flour tortilla in the microwave for about 38 seconds or less, just enough to make it soft so that it will roll without breaking.

As soon as the tortilla comes out of the microwave…

…put two heaping serving spoons (approx. 2 heaping tablespoons) of the cherry filling on the tortilla.

Spoon the filling in a narrow lengthwise area about an inch away from the sides of the tortilla.

Fold the front of the tortilla over the cherry pie filling as tight as possible all the way around the pie filling (so none of the filling can squeeze out when rolling the tortilla).

Fold over each of the sides in a 2-inch fold.

Roll the tortilla over the pie filling as tight as possible.

Repeat this process of filling and rolling the tortillas for as many servings as you would like.

Add canola oil in a skillet so that it’s about 1 inch deep in the pan.

Heat the oil and put the pie rolls in the skillet.  The oil gets hot fast so keep an eye on it in case you need to turn the heat down a bit.

Then continue turning the pie rolls so they cook evenly.

Cook the pie rolls until they are golden on all sides.

Then,

lay the pie rolls on a paper towel to get rid of any excess oil.

While they’re hot, put the pie rolls in individual serving dishes and dust them with powdered sugar.

Then top each pie roll with 2 scoops of vanilla ice cream (or more if you like).

Add a good size dollop of whipped topping or whipped cream on top.  Garnish with a maraschino cherry.

This is best when served hot right out of the skillet.

enjoy.
