HOW TO MAKE THIS RECIPE

For the Muffins:
Preheat the oven to 400 degrees F.
In a large mixing bowl, add flour, sugar, baking powder, salt, egg (beaten), canola oil, and milk.
Mix together just enough to form a batter (don’t beat until smooth).
Next,
…to the mixing bowl add mini chocolate chips and,
mashed bananas.
Gently stir together.
Then…
…spoon the batter into a lined muffin tin.
Fill each muffin liner about two thirds full.
Set aside for just a moment.
For the Streusel:
In a medium size bowl, add flour, brown sugar, cold butter, and chunky peanut butter.
Using a fork, cut (or smash) the butter into the mixture until small crumbles form.
Top the muffins evenly with streusel and…
…bake in a preheated oven (at 400 degrees F.) until done (about 20 to 25 minutes).
Test the doneness by inserting a toothpick into the middle of one of the muffins; if it comes out clean then it should be done.
Let cool before serving.
Garnish with mini chocolate chips.
Serve as a finger food or…

Ingredients
For the Muffins:
- 1-3/4 cups flour
- 1/2 cup sugar
- 3 teaspoons baking powder
- 3/4 teaspoon salt
- 1 egg beaten
- 1/3 cup canola oil
- 3/4 cup milk
- 2 large very ripe bananas or 3 small very ripe bananas
- 1/3 cup mini chocolate chips for the batter
- 2 tablespoons mini chocolate chips for garnish
For the Streusel:
- 1/4 cup flour
- 1/4 cup brown sugar
- 1 tablespoon cold butter
- 1 tablespoon chunky peanut butter
Instructions
For the Muffins:
- Preheat the oven to 400 degrees F.
- In a medium size bowl, add the flour, sugar, baking powder, salt, egg, canola oil and milk. Mix together.
- Gently stir in the chocolate chips and mashed bananas.
- Add the batter to a lined muffin tin (about two thirds full) and set aside for a moment.
For the Streusel:
- In a small bowl, add the flour, brown sugar, peanut butter and butter. Cut (or smash) the butter into the mixture by using a fork until the mixture turns into small crumbles.
- Top the muffins evenly with streusel.
- Bake in a preheated oven (at 400 degrees F.) until done (about 20 to 25 minutes) (test the doneness by inserting a toothpick into the middle of one of the muffins; if it comes out clean then it should be done).
- Let cool before serving. Garnish with mini chocolate chips.
